Raw coffee seeds, also known as coffee beans, are the seeds found inside the fruit of the coffee plant. These seeds are harvested and processed to eventually produce the coffee that is enjoyed by millions of people around the world. Coffee trees belong to the Rubiaceae family, and there are several species within this family that are cultivated for coffee production, including Arabica and Robusta.
The raw coffee seeds are typically green in color and have a distinct oval shape. They are encased in a thin, parchment-like layer known as the endocarp, which is surrounded by a fleshy pulp layer called the mesocarp. The mesocarp is the part of the coffee fruit that is typically consumed by animals, including birds, which help in seed dispersal.
Once the coffee cherries are harvested, the raw seeds are extracted through a process called coffee processing. There are two main methods of processing: the dry method and the wet method. In the dry method, the cherries are spread out to dry in the sun, and then the dried fruit is removed to reveal the raw seeds.
In the wet method, the cherries are first pulped to remove the outer layers, and then the raw seeds are fermented and washed to remove the remaining pulp. The raw seeds are then dried either naturally in the sun or using mechanical dryers.
Raw coffee seeds contain several key components that contribute to the flavor and aroma of the final coffee product. The two main components are caffeine and chlorogenic acids. Caffeine is a natural stimulant that gives coffee its energizing effect, while chlorogenic acids provide the characteristic acidity and bitterness of coffee.
Raw coffee seeds are typically roasted before they can be brewed into coffee. Roasting is a process that involves heating the raw seeds to high temperatures, which causes them to undergo several chemical reactions. These reactions lead to the formation of the aromatic compounds that give coffee its rich flavor and aroma.
Roasting also causes the raw seeds to change in color, turning from green to various shades of brown. The degree of roast can greatly influence the flavor profile of the coffee, with lighter roasts generally having a milder flavor and darker roasts having a bolder and more robust flavor.
In conclusion, raw coffee seeds are the seeds found inside the fruit of the coffee plant. They undergo processing and roasting to ultimately become the coffee that is consumed worldwide. These seeds contain caffeine and chlorogenic acids, which contribute to the flavor and aroma of the final product. Understanding the journey from raw coffee seeds to a cup of brewed coffee helps appreciate the complexity and artistry behind this beloved beverage.

Coffee prices remain highly volatile. In 2022, the average annual price for Arabica is forecast to decline thanks to expected production growth, while Robusta price will go up on skyrocketed demand from consumers, preferring cheaper alternatives to more expensive counterparts.
Global prices for coffee have skyrocketed to a seven-year high, driven by fears of a significant reduction in production in Brazil due to freezes and the depletion of global stocks. Further growth in prices for the product will be stimulated by the reduction in production in other leading supplying countries such as Honduras and Indonesia, coupled with increased freight costs. A decrease in coffee production will lead to a fall in global exports by -4% y-o-y, which could lead to local imbalances in supply and demand and drive up consumer prices in key European and American markets.
Coffee yield figures remained robust in 2020 and coffee bean exports increased, despite the disruption to supply chains caused by the Coronavirus restrictions. Home coffee consumption surged, thereby helping to offset the slump in sales following the closure of the HoReCa segment. Average coffee prices remained growing gradually through to Q1 2021.
